The pineapples are washed, de-crowned, and the manual process peels off the skin and are passed onto the conveyor belt for sorting.  The pineapples are sorted based on their firmness, colour, and shape. The damaged fruits are rejected. The fruits are cut into slices, placed on the conveyor belt, and passed to the dicer where it dices the fruits to the specified required pineapple sizes. Then the dices are passed to the blast freezer and from there the frozen pineapple dice are stored in a cold storage room and maintained at -18 degree celsius.
